Essay About Christmas Spice Cookies

Ingredients

Ingredients

  • 3/4 pound butter (3 sticks of margarine can be used)
  • 3 eggs
  • 1/2 pound light brown sugar
  • 1-1/2 teaspoon cinnamon
  • 1-1/2 teaspoon nutmeg
  • 1-1/2 teaspoon cloves
  • 1-quart flour (converted I use 4 cups)

This cookie is a traditional cookie for the Christmas season and can be made a few weeks in advance and stored in an airtight container.

I lost this recipe that my Mom made every year on the griddle. I was so surprised that the taste of this cookie is exactly like my Mom’s cookies. Although, my Mom cooked this cookie a little differently than what this recipe instructs you to do, I can assure you are going to crave this cookie as a tradition just like I did. I’m thinking that this recipe was handed down because my Mom’s griddle had a handle for cooking over an open fire such as would have been used in a hearth.

Mixing and Baking

Cream butter; add beaten eggs. Then add sugar. Add spices to flour mixture and sift. Then add dry ingredients to first mixture. Beat all well. Roll and cut in various shapes.

Place on parchment paper on a cookie sheet. Bake at 350 to 375° for 10-12 minutes.

Griddle Method

My mom would place the individual cookies on a griddle and cook them until they were crisp.

Iced or Not

My Mom didn’t ice these cookies. They came off the griddle crisp and ready to be stored in a container for Christmas.

However a thin layer of cookies icing would make these cookies even more special and add to the taste. I don’t suggest making designs but you could use the cookie decorator icing around the edge and then fill in.
